Potato Soup

I love the recipes in my recipe box that are handwritten by a friend. I have a great zucchini bread recipe from an old neighbor, my grandma’s cinnamon roll recipe that I’m afraid to try, and my sister’s awesome pasta and broccoli recipe. Every time I make one of those recipes, they seem a little more personal than the recipes from a book or website. This weekend, I made Old Fashioned Potato Soup from my friend Angie. We lost touch after I moved, but I think about her every time I make this soup!

Old Fashioned Potato Soup

6 diced potatoes
1 C. sliced celery
2 sliced carrots
1/4 C. onion (chopped)
3 C. milk
1 1/2 C. ham cubes
1/4 tsp. pepper
1 C. Velveeta cheese cubes

Put potatoes, celery, carrots and onions in a large kettle. Cover them with water and cook until soft and water is almost gone. Watch closely. Add 3 cups milk, ham and pepper. Cook until thick, about 2-3 hours. Add cheese cubes and simmer a little longer. Add more milk if it gets too thick.
